You could say I know my beef, given that my husband and I own and operate a Black Angus cow/calf operation in Southwest Colorado near Durango. We’ve been here for thirteen years since moving from Southern California in 1986. We wanted to enjoy our retirement spending more time outdoors, and life on the ranch has been just that. I have always loved to cook for our family and friends; it’s a passion of mine. Grilling is one of my favorite ways to cook because it imparts a unique flavor and allows you to spend time outdoors while cooking.

I love the combination of beef and tropical fruits, so the combination of those two elements is really what makes this recipe special. The watercress is a perfect accent to the steak with its spicy taste. The Beringer Founders’ Estate Zinfandel was a natural choice because it complements my fruity and spicy dish just perfectly. I will be lucky to have a crowd supporting me at the Great Steak Challenge – my wonderful husband Wayne, our cousins Chet and Diane and our great friends Dave and Julie.
